Schezuan Style Stir Fried Vegetables

Ingredients

1/2 cup cabbage cubes  
1/2 cup sliced spring onion
3/4 cup sliced baby corn (parboiled)
3/4 cup broccoli ( parboiled )
1/2 cup capsicum
1/2 cup zucchini sliced
4 dry red chilies broken into pieces
4 tsp schezuan sauce
2 tsp cornflour mixed with 1/2 cup water
a pinch of sugar
1 tbsp oil
salt to taste

Method

  1. Heat the oil in a dish microwave it for 1 minute , add the dry red chillies, cabbage and ¼ cup water and allow it to cook till the water evaporates and the cabbage is tender for 6 minutes in microwave.
  2. Add the spring onion whites, and sauté for for another minute in microwave.
  3. Add all the other vegetables and the Schezwan sauce and cook for a minute in microwave.
  4. Add the cornflour paste, sugar and salt. Mix well and allow it to come to a boil for 5 minutes in microwave .
  5. Serve immediately.

Vegetable makhanwala

Things required:

  • 1/2 cup french beans
  • 1/2 cup carrot
  • 1/2 green peas
  • 1/4 cup baby corn
  • 1/2 cauliflower florets
  • 1/2 cup onions sliced
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon chilli powder
  • 1/2 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 4 tablespoon cream
  • 1/2 teaspoon kasuri methi
  • 2 teaspoon sugar
  • 4 tablespoon butter
  • salt to taste

Method:

  • Combine onion, ginger, garlic, tomatoes, turmeric powder, chilli powder in a microwave safe bowl on high for 1 minute. let it cool then make puree.
  • Put 2 tablespoon of butter and cumin seeds and microwave on high for 1 minute.
  • Add french beans, carrots, green peas, baby corn, cauliflower cover with a lid and microwave on high for 5 minutes, then keep aside.
  • Add 2 tablespoon butter, cooked puree, vegetables, garam masala, cream, kasuri methi, sugar, salt and mix well. Microwave on high for 4 minutes.
  • Garnish with corriander and butter and serve hot.
